Masala Aloo Gobi

  • 1 tsp Pulao Masala

  • 1 tsp Ginger Garlic Powder

  • Karam (chili powder)

    • 2 tsp for spicy, 1 tsp for medium, 1/2 tsp for mild

Additional Ingredients to Purchase 

  • 2 medium potatoes

  • 2 cups cauliflower florets

  • 1 onion; chopped

  • Lemon juice

  • 1 tsp cumin

  • ¼ tsp turmeric

  • 1 tsp salt

Instructions

  1. Chop cauliflower into small florets and add to a bowl of warm water for 3 minutes.

  2. Drain completely and set aside.

  3. Cube potatoes into small pieces and keep them in a bowl of cold water until ready to use.

  4. Heat oil in a pan, add cumin seeds and let them sizzle.

  5. Add onions and 1 tsp ginger garlic powder and stir fry for a few minutes until they soften.

  6. Add potatoes and fry for an additional 5 minutes.

  7. Cover and cook on low to medium heat until the potatoes are slightly tender but still firm (TIP: add some water if potatoes are sticking or to quicken cooking time).

  8. Next, add the cauliflowers and stir fry for 3-4 more minutes.

  9. Add Karam, Pulao Masala, turmeric, and mix well.

  10. Add a splash of water to the pan and scrape down the sides and bottom of the pan.

  11.  Cook covered, stirring frequently until both potatoes and cauliflower are nearly fork tender.

  12. Add salt and finish cooking on low until the potatoes are fully tender and cooked through.

  13. Finish with some lemon juice and enjoy!
